Twenty-five years ago, you couldn’t get a decent taco in New York. Today, thanks to Zarela Martinez, you can experience culinary delights like pescado con coco (fish with coconut and fresh mint) and costillas con longaniza (baby back ribs and sausage marinated in lime), garlic and oregano. Feet In Two Worlds shares her recipes.

Martinez opened doors for young Hispanic chefs, laying the building blocks for today’s Latino food scene in New York City. Her intro began when she met Chef Paul Prudhomme in New Orleans.

“Chef Prudhomme was so taken with Zarela’s unique personality and culinary style that he invited her to cook for an event at the renowned Tavern on the Green restaurant in New York, alongside such luminaries as Alice Waters and, later, Wolfgang Puck.  The event launched her career in New York, followed shortly after by reviews in The New York Times, and an invitation to cook for President Ronald Regan and Queen Elizabeth II. She eventually moved to New York with her twin sons, Rodrigo and Aarón.”

And on her YouTube channel you’ll find this gem: Zarela’s Guacamole.
